I can think back to the years of university even going further to little me in elementary school. Those were times when my mother used to chef up some amazing pancake cakes for me in the kitchen. Exam times were when you need them most. Seriously. These were the golden years that many may remember for themselves.

The time when food appeared in front of you without with out a thought…oh childhood.

Reminiscing on my favorite exam prep food I decided to pack a list of protein pancake recipes for you in times of need.

2 Large Eggs (or 4 Large Egg Whites)

1 Teaspoon Vanilla Extract

2 Tablespoons (15g) Coconut Flour (or Oat Flour)

1 Scoop (39g) LeanPro 100% Whey Vanilla Protein Powder

5 Ounces (150g) Fat Free Cream Cheese

1/2 Cup Blueberries

1/2 Teaspoon Baking Powder

2 scoops protein powder vanilla is great!

2 tablespoons flax seed meal

1 cup fresh spinach (densely packed)

1 cup oat flour (if you’ve read my past posts you know I grind large flake oats for this)

1 cup non-dairy milk (I use Silk Creamy Cashew Unsweetened)

1/4 cup fat-free cottage cheese

1/4 cup egg whites

1 Tbsp coconut flour

1 tsp coconut oil

1 tsp guar gum

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla extract

1/2 tsp each of basil, thyme, ginger, nutmeg

Green food dye (a few drops)

Pinch of salt.

1/4 cup Plain or vanilla protein powder

1/2 cup Plain low fat Greek yogurt (or plain vanilla yogurt)

1/2 tsp Cinnamon

Pinch Ground ginger [1]

Pinch Nutmeg [1]

Pinch Salt

1/2 tsp Baking powder

2 Egg whites

1 cup Old fashioned oats (gluten free if sensitive)

1/2 cup Water

2-4 Packets of stevia (or sweetener of choice to taste)

1/2 cup Carrots, chopped fine (these will be blended into the batter)

1/4 cup Carrots, grated (these will be stirred into the batter)

2 tbs Chopped walnuts

2 tbs Golden raisins (optional)

[1] You could also use 1/2 tsp pumpkin pie or apple pie spice in place of the nutmeg and ginger.

1 cup buttermilk
